Apple Crisp

As soon as fall rolls around, we usually have an abundance of freshly picked apples- whether they are my favorite variety from the store or random types grown by neighbors, family or friends. I decided make an apple crisp for dessert to use some of them up and it hit the spot! There’s nothing like the crispy topping over the spiced apples, especially with a scoop of vanilla ice cream or coconut milk drizzled on top! I hope you enjoy this as much as my family did! Enjoy!

Quick tip: Try adding some other fruits to the mix sometime- peaches, berries, cherries, etc.

Apple Crisp
Prep time: 15 minutes | Cook time: 45-60 minutes | Serves: 3-4

Ingredients:

Filling:
6 tart apples peeled, cored and sliced
¼ cup coconut sugar
2 tablespoons coconut flour
2 teaspoon cinnamon

Topping:
1 cup walnuts, finely chopped
½ cup almond flour
½ cup coconut flour
¼ cup coconut oil
¼ cup coconut sugar
1 teaspoon cinnamon

Directions:

1.) Preheat the oven to 350° F. Mix the apples with the coconut sugar, coconut flour and cinnamon, then place in an 8×8” baking dish.

2.) Stir together all the ingredients for the topping and mix until incorporated but still crumbly. Crumble the topping over the apples and bake for about 45 minutes or until the top is golden brown and the filling is bubbling. Serve with a scoop of vanilla ice cream or coconut milk drizzled on top.
