Sweetened Whipped Cream with Fresh Berries

This is one of the most simple desserts you could ever make and it’s probably one of my top 5 favorites! This tasty dessert comes together in only a matter of minutes and it’s one that you don’t have to feel guilty about enjoying! For a dairy free version, whip some coconut cream or full-fat coconut milk with the coconut water poured off (place the can in the fridge for an hour or so to allow it to separate and then whip the thick, white coconut cream). Enjoy!

Quick tip:  Place your mixing bowl and beaters/whisk in the freezer for about 10-15 minutes before whipping the cream- the extra cold helps it whip up better!

Sweetened Whipped Cream with Fresh Berries
Prep time: 15 minutes | Serves: 4

Ingredients:

1-2 cups heavy cream, straight from the refrigerator
2 teaspoons vanilla or almond extract
A few drops of sweetener, maple syrup, honey, liquid stevia
2 pints sliced fresh strawberries or berry of choice

Directions:

1.) Pour the heavy cream into the chilled bowl and whip until thick and fluffy, using a whisk, hand or stand mixer. Add the vanilla and sweetener of choice.

2.) Serve with the berries and a square of dark chocolate, if desired.
