Blueberry-Nectarine Salad with Apple Cider Vinaigrette

This Blueberry-Nectarine Salad is a fresh and nutritious meal or side salad for just about any other dish! The sweet flavors of the fruit are highlighted by the tangy dressing, while the creaminess of the avocado and crunch of the sunflower seeds round out the rest of this refreshing salad. Blueberry-Nectarine Salad with Apple Cider Vinaigrette
Prep Time: 10 minutes | Serves: 2


4-6 cups spring mix
½ cucumber, thinly sliced
½ cup blueberries
1 nectarine, sliced
2-3 tablespoons sunflower seeds

For the dressing:
¼ cup olive oil
1-2 tablespoons apple cider vinegar
1-2 teaspoons honey
2-3 teaspoons Dijon mustard
Garlic powder, to taste
Salt and freshly ground pepper, to taste


1.) Combine the salad ingredients in a bowl or on two plates. Whisk the dressing together in a small bowl and drizzle over salads before serving.
