Chicken Stir Fry with Tahini Sauce

Tahini is one of those ingredients that I love but don’t use often. It is the paste made from sesame seeds and it is often used to make creamy sauces and dips, like hummus. It is also a great substitution for peanut butter, as it has a similar nutty flavor but is a less common allergen. This tahini sauce is delicious on everything and it’s an easy way to get picky eaters to eat their veggies!

 

Quick tip: Make a double batch and keep it in the fridge to use as a dressing!

Chicken Stir Fry with Tahini Sauce
Prep Time: 30 minutes | Cook Time: 15-20 | Serves: 2-3

Tahini Stir Fry 1

Ingredients:

For the sauce:
½ cup tahini
4 tablespoons lemon juice
1-2 tablespoons coconut amino
1 tablespoon rice wine vinegar
1 tablespoon maple syrup
1 clove garlic, minced
½ teaspoon turmeric powder
¼ teaspoon cumin
Cayenne, to taste
Salt and freshly ground pepper, to taste
Water, as needed

2 tablespoons coconut oil
2 pounds chicken breast, boneless and skinless, thinly sliced
Chili powder, to taste
Smoked paprika, to taste
½ onion, sliced
2 cloves garlic, minced
3 carrots, sliced
2 stalks celery, chopped
1 head broccoli, cut into florets
2 zucchini, sliced
1 bell pepper, chopped
Water, as needed

Optional for serving: sesame seeds, cauliflower rice, steamed rice, etc.

Directions:

1.) In a blender or food processor, combine the sauce ingredients, adding water as needed to reach the desired consistency.

2.) Melt 1 tablespoon of coconut oil in a large skillet over medium-high heat and cook the chicken until no longer pink in the center. Season with salt, pepper, chili powder and paprika and set aside.

3.) Melt the other tablespoon of oil in the pan and cook the onion and garlic until fragrant, about 1-2 minutes. Add the celery and carrot and cook for 2-3 minutes before adding the broccoli, bell pepper and zucchini. Cook for a few minutes longer, until tender and bright in color. Adding few tablespoons of water and covering will help steam the veggies quicker.

4.) Stir the chicken into the veggies and serve over cauliflower or steamed rice, with the tahini sauce drizzled over the top.
