Chocolate Chip Cookies

Who doesn’t love a warm chocolate chip cookie? This recipe is a huge hit at my house, you wouldn’t even know it’s gluten free! These cookies are everything you could ever want…They’re thick and chewy, nutty and buttery. Be sure to enjoy one fresh out of the oven with a hot cup of coffee or your favorite beverage!

Quick tip: For a dairy-free version you could substitute coconut oil for the butter and dairy free-chocolate for the chocolate chips.

Chocolate Chip Cookies
Prep time: 15 minutes | Cook time: 15 minutes | Serves: 4-6

3 tablespoons unsalted grass-fed butter
¼ cup coconut sugar
1 pastured egg
1⅔ cups almond flour
¼ teaspoon salt
½ teaspoon baking soda
1 tablespoon vanilla extract
½ cup organic dark chocolate, chopped (least sugar possible)


1.) Preheat the oven to 350° F and line a baking sheet with parchment paper. Cream together the butter and coconut sugar until smooth. Add the egg and vanilla and mix until smooth. Add the salt, baking soda and almond flour and mix until everything is fully incorporated. Stir in the chocolate chips.

2.) Scoop the dough, place on the prepared baking sheet and gently press down to flatten. Bake for 6-8 minutes, or until the edges are golden brown.
