Gluten-Free Cinnamon Apple Bread

With fall here, I find myself craving autumn spiced items all the time! This Gluten-Free Cinnamon Apple Bread definitely satisfied my cravings! I cut a thick slice and spread a bit of salted butter over the top and it melted and soaked in instantly, as the bread was still hot from the oven. This recipe is so simple to make, it has great flavor, it’s not loaded with sugar or junk and it will leave your house smelling like a bakery! What’s not to love about that?

Quick tip: If the top starts to darken too much, lightly cover with foil and continue to bake until done. This recipe also works really well for muffins!

Gluten-Free Cinnamon Apple Bread
Prep time: 15 minutes | Cook time: 50-60 minutes | Serves: 12

Ingredients:

Coconut oil spray, as needed
2 cups almond butter (or nut butter of your choice)
½ teaspoon salt
1 tablespoon cinnamon
4 eggs
½ cup honey or maple syrup
2 cups apples, shredded or diced
1 tablespoon vanilla extract
1 teaspoon baking soda
2 teaspoon apple cider vinegar
1 cup pecans (or nut of choice), chopped

Directions:

1.) Preheat the oven to 350° F and grease a 9×5” loaf pan with coconut oil. In a large bowl, combine the nut butter, salt, cinnamon, eggs and honey. Stir well then add the apples and vanilla.

2.) Sprinkle the baking soda on the top of the batter, then pour the vinegar on top. The mixture will foam a little, then fold it all together. Fold in the nuts, then pour the batter into the loaf pan and bake for about 50 minutes or until a toothpick comes out clean when inserted in the center. Allow to cool slightly before serving.
