Grain-Free Pumpkin Spice Muffins

These Pumpkin Spice Muffins are a fall favorite in my household. Even if you aren’t necessarily “gluten free,” these muffins are a tasty treat that will really help you get into the season. One of the things I really like about these is that they’re not overly sweet, so you don’t have to feel bad about eating a couple for breakfast or a mid-morning snack. They’re perfectly paired with a hot cup of tea or coffee!

Quick tip: To make pumpkin bread, bake in a 9x5” loaf pan and increase the baking time to about 60-70 minutes.

Grain-Free Pumpkin Spice Muffins
Prep Time: 10 minutes | Cook Time: 40-50 minutes | Serves: 4-6

Ingredients:

1½ cups almond flour
½ cup coconut flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
½ cup coconut sugar
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
¼ teaspoon ground ginger
⅛ teaspoon ground cloves
½ (15 oz.) can pumpkin puree
3 eggs, at room temperature
½ cup coconut oil, melted
1 teaspoon vanilla extract
½ cup addition of choice (flaxseeds, raisins, chopped nuts, chocolate chips, etc.)

Directions:

1.) Preheat the oven to 350°F and line a muffin tin with parchment liners or lightly grease with coconut oil spray.

2.) In a large bowl, whisk together all the dry ingredients. Whisk together all the wet ingredients in a separate bowl, then carefully mix into the dry ingredients until no lumps remain. Fold in the raisins or nuts, if using.

3.) Scoop the batter into the prepared muffin tin and bake for 20-25 minutes or until a toothpick comes out clean when inserted in the center.
