Grilled Skewers

During the summer months, I like to utilize the grill as much as possible to keep the temperature down in the house. And besides that, grilling food automatically makes it taste better, in my opinion! These grilled skewers are always a great hit, whether they’re for a party or small family dinner. It’s a perfect way to combine the veggies you like with your favorite protein and have them conveniently skewered to make grilling simple. Eating off a stick makes it more fun too! Be sure to give these skewers a try the next time you fire up the grill!

Quick tip: Recruit the little ones to help skewer!

Grilled Skewers
Prep Time: 15-20 minutes | Cook Time: 20-25 minutes | Serves: 4-6

Ingredients:

2 pounds meat of choice, cut into 1½” pieces
2 bell peppers, cut into 1½” pieces
1 red onion, cut into 1½” pieces
Yellow crookneck or zucchini, cut into 1½” pieces
Salt and freshly ground pepper, to taste
¼ cup avocado oil
3 cloves garlic, minced
1 tablespoon fresh rosemary, minced
Thick wooden or metal skewers

Directions:

1.) Preheat a grill to medium-high heat. In a bowl, combine the oil with the garlic and rosemary. Alternately spear the meat and veggies onto the skewers, then brush on all sides with the oil mixture. Season with salt and pepper and place on the grill.

2.) Cook until the meat reaches the desired doneness and chicken is no longer pink in the center. Serve with a salad or sides of choice.
