Hawaiian Spaghetti Squash Pizza Casserole

My family and I love pizza, so I’m always trying to re-create it to make it a nutritious meal. Spaghetti squash is so versatile and it works perfectly in a dish like this. You can add in whatever toppings you like to create your favorite pizza casserole. We love Hawaiian pizza, but pepperoni is great, Italian sausage-mushroom-olive, vegetarian, buffalo chicken, etc. Have fun and get creative, you really can’t go wrong with this!

Quick tip: If your spaghetti squash is extra watery, place in a colander after roasting to let the excess water drain.

Hawaiian Spaghetti Squash Pizza Casserole
Prep Time: 40-50 minutes | Cook Time: 30-40 minutes | Serves: 4-6

Ingredients:

1 large spaghetti squash, cut in half and seeds removed
1 tablespoon coconut oil
½ onion, diced
2 cloves garlic
1-1½ cup pineapple, diced and divided
4 organic, pastured eggs
½ pound ham or Canadian bacon, diced and divided
1 cup pizza sauce (no sugar added)
1 teaspoon Italian seasoning
Salt and freshly ground pepper, to taste
Shredded mozzarella for topping, optional

Fresh basil, optional for serving

Directions:

1.) Preheat the oven to 400° and place the squash cut side down on a baking sheet. Bake until tender, about 40-50 minutes. Set aside to cool, then scrape the insides out of the shell.

2.) In a medium skillet over medium-high heat, melt the coconut oil and sauté the onion and garlic until translucent. Place in a bowl.

3.) With the onion mixture, whisk in 1 cup pineapple, eggs, ⅔ of the ham, sauce, Italian seasoning, salt and pepper. Stir in the spaghetti squash, then pour the mixture into a 9×13” baking dish.

4.) Bake until the center has puffed up and feels firm when pressed, about 30-40 minutes. Top with cheese (if using) and the remaining ham and pineapple, then return to the oven and broil until the cheese is bubbly and melted. Serve with salad or your favorite sides.
