Parmesan-Roasted Zucchini

Zucchini is a great ingredient to have on hand because of it’s versatility (and nutrition, too!). This recipe for Parmesan Roasted Zucchini transforms what is usually a simple side dish into a delicious main course that even those picky eaters will enjoy. This is a great option if you love pasta but want a healthier option- it’s much lower in carbs and way better for you too! You won’t even miss the noodles. Be sure to give this recipe a try, especially if you ever have an abundance of zucchini this summer!

Quick tip: To keep your hands relatively clean during the dredging process, designate one hand for dipping in the egg and the other for dredging in the parmesan mixture.

Parmesan Roasted Zucchini
Prep Time: 15-20 minutes | Cook Time: 20-25 minutes | Serves: 4


Coconut oil spray, as needed
6-8 zucchini, cut into ¼” thick strips lengthwise
2 eggs, whisked
1 cup Parmesan cheese, finely shredded
1 cup almond flour
Salt and freshly ground pepper, to taste
Garlic powder, to taste
Italian seasoning, to taste

Optional for serving: meat marinara, tomato sauce, pesto, etc.


1.) Preheat the oven to 400° F. Line two baking sheets with parchment paper and spray them with coconut oil spray. Whisk two eggs and pour onto a large plate. On another large plate, mix the almond flour, Parmesan and seasonings.

2.) Take a slice of zucchini and dip it in the egg, then dredge both sides of it in the Parmesan mixture. Place on the baking sheet and continue with the rest of the slices.

3.) Place the sheet pans in the oven and bake until golden brown on both sides, about 20-25 minutes. While they are in the oven, heat or make the sauce. Serve on top of the zucchini slices, with freshly grated Parmesan and other sides of choice, if desired.
