Pecan Pie Bars

With the holidays right around the corner, it’s nice to have a new recipe to share with your loved ones, especially if it’s better for them than something else they’d normally eat! Thanksgiving is not Thanksgiving without pecan pie, but it’s not worth eating if it’s loaded with corn syrup (in my opinion). These Pecan Pie Bars are gluten and refined-sugar free, making them a slightly more nutritious alternative to traditional pecan pie. These are not necessarily something I’d recommend eating every day, but once or twice a year I definitely think is okay. Enjoy!

Quick tip: If the dates aren’t very moist, soak in hot water for about 20 minutes before processing!

Pecan Pie Bars
Prep Time: 20 minutes | Cook Time: 40-50 minutes | Serves: 10-12


2 tablespoons unsalted butter, very cold and cubed
1 cup almond flour
⅓ cup coconut flour
⅔ cup tapioca flour
Pinch of salt
Ice water, if needed

½ cup maple syrup
½ cup Medjool dates, pitted
2 eggs
6 tablespoons unsalted butter, melted
Pinch of salt
1 tablespoon vanilla extract
2 cups pecans, coarsely chopped


1.) Preheat the oven to 350° F. Lightly oil an 8×8” baking dish and line with parchment paper. In a food processor, pulse the butter chunks with the flours and salt, until a coarse meal forms. If the dough is still dry, pulse in some ice water, one tablespoon at a time until the dough comes together. Press into the prepared pan and bake until lightly golden brown, about 10 minutes.

2.) For the filling, combine the maple syrup and dates in a food processor and process until smooth. Add the eggs, melted butter, salt and vanilla and mix until smooth.

3.) Evenly spread the nuts out over the crust, then pour the filling over the top and bake for about 25-35 minutes, or until the filling is set and is slightly puffed in the center. Cool completely before slicing.
