Piña Colada

Sometimes a fruity cocktail is just what you need at the end of a long day. Typically Piña Coladas are loaded with sugar but my recipe is sweetened with pineapple juice and a couple drops of stevia. I prefer to use vodka instead of rum, but feel free to use the alcohol of your choice. Making your favorite drinks at home allows you to save money, control the quality and proportions so you can make it exactly how you like it. Skip happy hour and try making this health improved version at home!

Quick tip:  Try adding a squeeze of lime for a more zesty flavor!

Piña Colada
Prep time: 10 minutes | Serves: 1

Ingredients:

2 oz. gluten-free vodka
3-4 oz. 100% pineapple juice (no sugar added)
3-4 oz. full-fat coconut milk
Liquid stevia, to taste
Ice, as needed
Fresh pineapple, optional for serving

Directions:

1.) Combine all ingredients in a blender and puree until smooth. Serve with a wedge of fresh pineapple.
