Waffles have got to be one of my favorite indulgent weekend breakfasts. Because most restaurants don’t have a gluten-free waffle option, I like to make them at home, and it doesn’t require a ton of random ingredients. I think you’ll be surprised at how easy these are to make and how great they taste! There’s nothing like a fresh waffle hot from the iron that’s crispy on the outside and soft in the middle. Just serve with some sautéed leafy greens, eggs and sausage (or bacon) for a delicious and complete meal!

Quick tip: Throw in a handful or two of frozen blueberries or chopped banana sometime!

Prep Time: 10 minutes | Cook Time: 10-15 minutes | Serves: 2-3


Coconut oil spray, as needed
½ cup almond flour
½ cup coconut flour
½ cup tapioca flour
2 teaspoons baking powder
¼ teaspoon salt
5 tablespoons butter, melted
1 egg
1 teaspoon vanilla
½-1 cups coconut milk
1 teaspoon apple cider vinegar


1.) Heat up the waffle iron.

2.) In a small bowl, mix the vinegar with the coconut milk and set aside. Combine all the dry ingredients in a large bowl and combine the egg, vanilla and melted butter in a separate bowl. Whisk the wet into the dry and stir until smooth. Stir in the coconut milk, adding more if needed to thin out the batter if it’s too thick. It should be the consistency of thick pudding.

3.) Spray the waffle iron with coconut oil spray and place a scoop of batter into the machine. Cook until the waffle is golden brown and serve with fresh fruit, syrup or anything you like!
