Watermelon Salad with Mint and Goat Cheese

A friend hooked me on this watermelon salad a few years ago and now it’s a summertime staple! It’s the perfect balance of sweet with a little salty and the lime juice brings everything together. Watermelon is very nutritious, containing a lot of water and vitamins, such as vitamin C, A and B6. However, it does contain a lot of sugar, so please keep this in mind and don’t over indulge. This is a really simple dish that comes together in a matter of minutes and everyone will love it! Try bringing it to your next BBQ potluck or social gathering!

Quick tip: Freeze the goat cheese for about 10 minutes before using- it crumbles much easier that way and doesn’t stick to your fingers as much!
